Apple Chicken Salad

Salad Ingredients

  • 1/4 pound bacon, or 4-5 slices, cut into 1/2 inch bits
  • 8 boneless, skinless chicken thighs, chopped into 2 inch pieces, seasoned with salt and pepper
  • 1 avocado – peeled, pitted and cut into 1-inch chunks
  • 1 head romaine lettuce, chopped
  • 1/4 cup chopped red onion
  • 1/2 cup chopped walnut
  • 1 apple – cut into 1 inch chunks (optional)

Best Dressing on the Planet!

  • 1/4 cup balsamic vinegar
  • 2 tablespoon apple cider
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 teaspoon mustard
  • pinch salt
  • pinch black pepper
  •   1/3 cup extra virgin olive oil

Rosemary Zucchini Ground Turkey

Easy and delicious recipe using lean mean ground turkey.

Ingredients :

– 1 pack of ground turkey (Approx 1.25lb)

– 4 medium size zucchini

– 4oz of marcona olive oil almonds

– 1 tablespoon of olive oil

– Trader Joes special sea salt; Thyme, Lemon, and Bay

or

– 1/2 tablespoon rosemary

– 1/2 tablespoon thyme

– 1/2 lemon

Directions :

Saute  in olive oil. Add rosemary, salt, pepper, and thyme (or get fancy sea salt from trader joes.).

Paleo Chili

There are many ways to cook up chili. I especially like chili when it comes together without much thought or an extra trip to the grocery store. Here is an easy organic recipe to serve with sweet potato and avocado.

1 1/2 lb ground beef

2 slices bacon

1 onion chopped

2 cloves minced garlic

3 jalapenos diced

1 bell pepper (any color)

1 tbsp pepper

2 tbsp chili powder

1 tsp cumin

1/2 tsp ground clove

1 tbsp unsweetened cocoa powder

1-15 oz can diced tomatoes

1- 6 oz can  tomato paste.

In a heavy pot or dutch oven add beef and bacon. If you buy lean beef start the bacon before and then add the beef. As this is cooking add onion, bell pepper, garlic, jalapenos. Cook until the meat is browning. Add spices stir well then cocoa and cook until fragrant. Add tomato and tomato paste and simmer for 25 minutes.

Serve with sweet potato and avocado.

Here is an easy and simple stir-fry recipe.  Check it out.

– 1 pound chicken tender strips

– 6oz  box choy

– 4 tablespoon Sesame oil

–  1 tablespoon roasted garlic

(Optional – 3-5 small chilies)

– Crushed red pepper

– Sea salt

– Pepper

Directions :

Saute chicken on medium high in 2 tablespoon of sesame oil.  Add sale, pepper, and pepper. 5-10 minutes cook time. Take out of pan.

Ground turkey and sausage brussels.

Ground turkey “Special”  with some sausage sausage Brussels.

Ingredients :

–  3lbs of Brussel sprouts.

– 4 strips of bacon.

– 2 chicken sausages.

– 1/4 cup of olive oil.

– 1/4 cup of olive oil.

– 1/2 red onion.

-1 cup of chopped mushrooms.

– 1 pound of ground turkey.

– 1/2 tablespoon garlic salt.

– 1/2 tablespoon pepper.

– 1/2 tablespoon chili powder.

Recipe :

Cook bacon in pan. Yake bacon out, leave fat.  Add shaved brussel sprouts to pan.

Really simple and delicious recipe. If you love avocados and tuna, you will love this recipe with no mayo used.

Turkey Egg Muffins!

Muffins in the morning! Muffins in the evening! Muffins at supper time! When Muffins are paleo and healthy, you can have muffins all the time!! The Turkey egg muffin is easy to make, great to eat later, and healthy.

Ingredients :

– 2 tablespoon olive oil.

– Olive oil spray.

– 1 pound ground turkey (I used ground turkey, but feel free to switch it up, 1 lb lean beef or pork.).

– 8 eggs.

– 1 cup of egg whites = 4 eggs ( You could make your life easier and just do a dozen eggs.).

– 1/2 red onion.

– 2 bell peppers.

– 2 jalapeños.

Directions

In skillet add oil, then cook ground turkey. Once its mostly cooked,  add red onion.

Chop your veggies.
