Paleo French Toast

French Toast

Easy and simple way to still have French Toast.

Ingredients :

– 2 eggs

– 1 tbs grass-fed butter

– 1 tsp nutmeg

– 1 tsp cinnamon

– 1/2 tsp vanilla extract

– 3 slices of “Paleo Bread”

–  Optional : Stevia

Directions :

Add eggs, nutmeg, cinnamon, and vanilla extract to a bowl. Mix well.

Let Paleo bread soak in the egg bowls. 30 seconds each side.

Turkey Egg Muffins!

Muffins in the morning! Muffins in the evening! Muffins at supper time! When Muffins are paleo and healthy, you can have muffins all the time!! The Turkey egg muffin is easy to make, great to eat later, and healthy.

Ingredients :

– 2 tablespoon olive oil.

– Olive oil spray.

– 1 pound ground turkey (I used ground turkey, but feel free to switch it up, 1 lb lean beef or pork.).

– 8 eggs.

– 1 cup of egg whites = 4 eggs ( You could make your life easier and just do a dozen eggs.).

– 1/2 red onion.

– 2 bell peppers.

– 2 jalapeños.

Directions

In skillet add oil, then cook ground turkey. Once its mostly cooked,  add red onion.

Chop your veggies.

Spray muffin pans with some olive oil spray. Pour mix in them. I found some extra turkey bacon and decided to use it. Just imagine how great some real bacon would taste?!

Finished product. Great for now. Put some in a ziplock and you have yourself lunch or a snack for later.

paleo bread (flax)

Here is another bread recipe. This is  from Elana’s Pantry , is great tasting, and holds together well for small sandwiches, toast, etc. The flax gives it a nutty flavor. This makes a good  snack with almond butter and honey or homemade preserves….

  • 1 ½ cups almond meal/flour
  • 2 tablespoons coconut flour
  • ¼ cup flaxseed meal
  • ¼ teaspoon sea salt
  • 1 ½ teaspoons baking soda 
  • 5 eggs
  • ¼ cup coconut oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  1. Place almond flour, coconut flour, flax, salt and baking soda in a food processor.
  2. Pulse ingredients together
  3. Pulse in eggs, oil, honey and vinegar
  4. Pour batter into a well greased small loaf pan (coconut oil or your favorite)
  5. Bake at 350° for 35 minutes
  6. Cool and serve

Paleo Bread (almond)

If you cook strict paleo, bread is off the menu. In search of a bread substitute most cooks, like  myself, follow many paleo blogs in search of what? the perfect paleo bread. Here is a recipe I found on  several blogs and was most consistently used.  I don’t know where it originated but I believe is was HERE AND HERE. I might get an email setting me straight…by all means let em rip. This is bread is easy to make, tasty, and adds a little bread to your morning breakfast. Is it perfect for you? Try it and let us know.  The slices are roughly 25% smaller than whole grain bread slices.

Ingredients

1 c almond butter (smooth)

3 eggs

1 tbsp apple cider vinegar

1/2 tsp baking soda

1/4 tsp sea salt.

Preheat oven 350 degrees

Blend eggs and almond until smooth and then add the other ingredients. Pour into a well greased (coconut oil) pan OR I suggest using parchment. Bake for 30-40 minutes. Cool before slicing

paleo pancakes

Tired of eggs every morning? Here is a very simple recipe to satisfy that pancake craving. Great on the weekends with the kids.

Ingredients:

3 bananas mashed

1/4c Almond butter (crunchy is best but smooth will work)

3 eggs

1 to 2 tsp cinnamon

Whisk all ingredients together

Heat skillet and oil with coconut oil. Cook and serve with fruit, agave, honey, or homemade preserves. Yum!

Morning Glory muffins

This muffin recipe is delicious. This muffin is naturally sweetened with all the right ingredients and hearty enough to hold you over until your next meal.

2 1/2 c almond flour

1 tbsp cinnamon

2 tsp baking soda

1/2 tsp salt

2 cups carrots grated

1 large apple (your choice except granny smith)  peeled, cored and grated

1 c shredded unsweetened coconut

1 cup raisins OR 1 cup dates OR 1/2 and 1/2 of both works great

3 large eggs

1/2 c coconut oil or avocado oil

1 tsp vanilla extrac

OPTIONAL ADD: 2 tbsp honey (I never use the honey because the muffins are already very sweet)

Preheat oven 350 F      Grease a standard sized muffin pan. Spray oils like coconut, safflower, avocado, grape seed are all available and work great.

Combine almond flour, cinnamon, baking soda and salt in a large bowl. Add carrot, apple, coconut, raisins and combine well.

In separate bowl, whisk eggs, honey, oil and vanilla together and pour over dry ingredients.

This mix is very thick and does not rise.

Spoon into muffin pan and cook for 25-35 minutes depending on size of muffin. Makes 18 medium sized muffins.

You can also make a bread loaf and increase bake time  to 45 – 60 minutes.

French toast eggs!.. Hold the starch please.

Here is a recipe a friend of mine showed me. Delicious.. Paleo.. Fast. Recipe is a big 1 serving.

Ingredients

Ingredients –

– 5 eggs

– 1/2 tablespoon vanilla extract

– 1/2 tablespoon of coconut oil

– 1 teaspoon sea salt.. the Himalayan stuff.

– a lot of cinnamon

– drizzle of honey

directions –

step 1 – Add all the eggs to a bowl. Add vanilla extract and whip.

Add the eggs to a skillet on medium heat(this is where you use the oil). Push the eggs in from the outsides.

Flip the eggs. Add cinnamon and salt.

Drizzle honey and serve.
