Paleo Grilled Moroccan Chicken with a Paleoish Garlic sauce.

Not many things are better than meat on a stick. Try this healthy  Moroccan recipe today!

Ingredients for Chicken:

– 4lbs of chicken breasts

– 4 garlic cloves minced

– 4 tsp ground cumin

– 4 tsp paprika

– 1/2 tsp crushed red pepper

– 1/2 tsp sea salt

–  1 cup chopped fresh parsley

Ingredients for Garlic sauce :

– 8 minced garlic cloves

– 3 tbsp olive oil

– 6 tbsp Fage plain yogurt

Directions:

– Cube chicken breasts.

– Mix parsley, garlic, cumin, paprika, and red pepper flakes with cubed chicken breasts. Let chicken marinate for at least 3 hours.

– Mix yogurt, garlic, and olive oil.

– Put 80z of chicken on each skewer.

– Grill chicken on medium high grill for 20 minutes. Rotate skewers every 10 minutes.

– Serve with veggies and dip chicken in garlic sauce.  Enjoy!

Zoodles (zucchini noodles) with Peanut Sauce and Grilled Chicken.

I love noodles! Here’s an easy and delicious recipe with some zucchinis! Invest in a spiralizer!

Ingredients:

– Sauce :

  • 6 small zucchini (about 16 ounces)
  • 2 tablespoon crunchy butter ( I used coconut/ peanut blend. Almond butter will work)
  • 1 tablespoon water
  • 1 tablespoon cider vinegar
  • 1 tablespoon coconut aminos
  • 4 cloves minced garlic
  • 1 teaspoon ( I added 2 teaspoons. I like it spicy!)
  • 1 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon sesame seeds

– Grilled chicken breasts.

– Coconut spray.

 

Directions :

1. Buy a spiralizer.

2. Wash zucchini. Cut the ends and spiralize all the zucchini.

3. Mix all the sauce ingredients.
4.  Heat a skillet on high and sauté zucchini for 3-5 minutes.

5. Add half of peanut sauce to  zucchini sauté.
6. Heat grilled chicken. Add sesame seeds. Top with more sauce.
