Spicy Grilled Eggplant

First off, I am not the biggest fan of eggplant, but anything grilled is pretty amazing. Check out the easy and yummy eggplant side dish below!


Ingredients :

– 1 jalapeño, minced. (If you can’t handle too much heat, seed the pepper.)

– 3 tablespoons coconut aminos

– 3 tablespoons lemon juice

– 1 tablespoon shallots

– 2 tablespoon green onion

–  1 tablespoon water

– 2 big eggplants.

– garlic salt to season.

Directions :


– Preheat grill to medium. Chop eggplant into 1/2 inch medallions. Get rid of ends.

– Mix all the dressing ingredients in a bowl.


– Spray each side of eggplant with coconut spray and garlic salt. Place on grill for 4-5 minutes each side.


– Add sauce on top of grilled egg plant. Serve!
