Pepper Burger

Ingredients :

-1lb lean beef

– 2 jalapeños

-2 sweet peppers

– 1 shallot

– 2 green onions

– eggs

– 1 cup of arugula

Directions:

1. Chop up peppers, onions, and shallots.

2. Measure out beef into equal parts. Add equal parts of each : green onion, sweet peppers, shallots, jalapeños.

3.  salt pepper burgers. Place burgers on to medium high grill. Add asparagus to grill. Season.

4. Add burger on top of arugula. Add soft egg.

Spicy Grilled Eggplant

First off, I am not the biggest fan of eggplant, but anything grilled is pretty amazing. Check out the easy and yummy eggplant side dish below!

Ingredients :

– 1 jalapeño, minced. (If you can’t handle too much heat, seed the pepper.)

– 3 tablespoons coconut aminos

– 3 tablespoons lemon juice

– 1 tablespoon shallots

– 2 tablespoon green onion

–  1 tablespoon water

– 2 big eggplants.

– garlic salt to season.

Directions :

– Preheat grill to medium. Chop eggplant into 1/2 inch medallions. Get rid of ends.

– Mix all the dressing ingredients in a bowl.

– Spray each side of eggplant with coconut spray and garlic salt. Place on grill for 4-5 minutes each side.

– Add sauce on top of grilled egg plant. Serve!

Bacon and Eggs. Romeo and Juliet of food.

Bacon and eggs for breakfast. Bacon and eggs for  lunch. Bacon and eggs for Dinner.

Ingredients :

– Brown rice pizza crust (Whole foods has it)

– 4 Small Eggs

– 3 slices of bacon.

– 60z low fat shredded mozzarella cheese (trader joes)

– 1 tablespoon fresh parsley

– 1 tablespoon of green onions

– 2 teaspoon shallots

– salt/pepper

Directions for Pizza

1. Add  in the following order :

– Pizza sauce

– 6oz cheese

– Chopped bacon

2.  Arrange bacon in a grid formation, get ready for those eggs.

3. Cook in preheated oven at 500 degrees for 2 minutes. Add eggs. Cook until eggs have cooked. about 10 minutes.

3. Take out, add shallots, green onions, and parsley. Eat and enjoy.
