cashew chicken

There are many ways to cook cashew chicken. This is just one of my new favorites.

1 tbsp coconut oil

2 lbs boneless skinless chicken thighs

sea salt

ground pepper

For Sauce:

3/4 c fresh squeezed orange juice (2-3 oranges)

zest of 1 orange

2 tbsp coconut aminos

1 tbsp walnut oil

2 garlic cloves chopped

1/2 tsp red chili pepper flakes


2 tbsp raw honey or 2 tbsp coconut nectar

ADD to dish

1/2 c 3/4 c  raw cashews

Diced green onions

Heat coconut oil in skillet. Cut  chicken thigh meat into bite size pieces and salt and pepper. Do not use too much oil. Drain any extra liquid. Brown chicken meat.

Save 1/4 c orange juice and set aside. Combine sauce ingredients in separate bowl and mix well.

Add the sauce to the skillet with the browned chicken until a light boil. Turn down heat to medium and simmer uncovered until sauce has thickened and very little liquid remains. Time about 5-8 minutes.

Add cashews and onions and and simmer a couple of minutes.  Stir in the 1/4 c orange juice and serve with a light salad. This recipe is very good without honey or coconut nectar.
