Fudge Brownie bites

Yes, this is a paleo recipe! What are the 2 main ingredients? Cocoa and yam puree. Delicious!

2/3 c yam puree

4 tbsp coconut butter

2/3 natural unsweetened cocoa powder

1/2 c coconut flour

1/4 tsp baking powder

1/4 tsp sea salt

2/3 c honey

1 large egg beaten

1 1/2 tsp vanilla extract

OPTIONAL ADD:

1/2 tsp espresso powder

Makes 24 bite size cookies

To make puree: peel and cut your yams and place in boiling water until soft enough for mashing. OR Heat oven to 400 degrees, place yam on baking sheet for 1 hour or until easily pierced with a fork. Mash yam or use a food processor. This can be done days ahead and frozen or refrigerated until ready to use.

For Brownie bites: Preheat oven 350 degrees

In a medium sauce pan over low heat, melt coconut butter. Remove from heat and add cocoa and mix well. Let cool.

In a medium bowl, whisk together flour, baking powder, and salt. Stir in honey, sweet potato, and egg.

In a small dish, stir together vanilla and espresso powder (if using) until espresso powder is dissolved. Add to cocoa mixture. Add cocoa mixture to flour and yam mixture and stir until no traces of flour remain. This dough is very sticky.

Take 1 tablespoon of mixture and roll into walnut size balls. Place on nonstick cookie sheet and flatten to disk shape.

Bake 10-15 minutes until tops of bites start to crackle. Remove and cool.  Store in air tight container if you have any left.
