Morning Glory muffins

This muffin recipe is delicious. This muffin is naturally sweetened with all the right ingredients and hearty enough to hold you over until your next meal.

2 1/2 c almond flour

1 tbsp cinnamon

2 tsp baking soda

1/2 tsp salt

2 cups carrots grated

1 large apple (your choice except granny smith)  peeled, cored and grated

1 c shredded unsweetened coconut

1 cup raisins OR 1 cup dates OR 1/2 and 1/2 of both works great

3 large eggs

1/2 c coconut oil or avocado oil

1 tsp vanilla extrac

OPTIONAL ADD: 2 tbsp honey (I never use the honey because the muffins are already very sweet)

Preheat oven 350 F      Grease a standard sized muffin pan. Spray oils like coconut, safflower, avocado, grape seed are all available and work great.

Combine almond flour, cinnamon, baking soda and salt in a large bowl. Add carrot, apple, coconut, raisins and combine well.

In separate bowl, whisk eggs, honey, oil and vanilla together and pour over dry ingredients.

This mix is very thick and does not rise.

Spoon into muffin pan and cook for 25-35 minutes depending on size of muffin. Makes 18 medium sized muffins.

You can also make a bread loaf and increase bake time  to 45 – 60 minutes.

    I’m amazed, I must say. Seldom do I come across a blog that’s equally educative and entertaining, and without a doubt, you’ve hit the nail on the head. The issue is something that too few people are speaking intelligently about. I’m very happy
    I stumbled across this in my search for something regarding this.
