Chocolate Thumbprint Cookies







I am always looking for paleo recipes that challenge and replace the traditional cakes and cookies I have cooked for years. This recipe takes the cake…or cookie! Using  (8) basic paleo ingredients this cookie is better than any thumbprint cookie I have ever had.  Makes 18 cookies.

1/2 c coconut oil

1 c coconut flour

4 eggs beaten

1/2 c maple syrup

1/8 tsp sea salt

1/2 c semi sweet chocolate organic 72% or up

1/4 c cocoa powder organic

1/2 tsp pure vanilla extract.

Optional Add for baking only: sprinkle with coconut palm sugar

Preheat oven to 375 degrees.

In a medium bowl, combine eggs, melted coconut oil, maple syrup, vanilla extract and salt.

Blend all ingredients with a hand mixer or whisk until batter is fully mixed

Refrigerate until set.

Form balls of dough using tbsp flattened and place on parchment lined or silpat baking sheet.

Melt chocolate chips over low heat in double boiler

Fill the center with the melted chocolate. OPTIONAL: sprinkle with coconut palm sugar.

Bake cookies for 15 minutes.
