Blueberry Muffins

 

 

 

 

 

 

 

If you are eating paleo and miss the baked goods, this recipe is perfect for you and your family. Makes 12 medium sized muffins.

Ingredients: Almond buter, almond flour, eggs, raw honey, baking soda, baking powder, coconut oil, cinnamon, and your favorite berry.  Optional: unsweetened coconut.

Preheat oven to 350 degrees. Line muffin tin with paper  baking cups or spray or coat pan with oil.  There are many paleo spray oils available. Coconut, grape seed, sunflower, walnut, etc.

1 c almond butter

1 c almond meal/flour

3 eggs whisked

1/2 c raw honey

1/3 c coconut oil, melted

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

1/4 tsp cinnamon

3/4 cup of organic blueberries OR your choice of organic fresh or frozen berry

Optional Add:

1/3 c unsweetened shredded coconut

Whisk the eggs then add all the ingredients together in a bowl.  There is no need to separate the wet and dry ingredients for this recipe. Fill 12  muffin cups and bake 18-20 minutes. These muffins are very moist but extra yummy with raw honey or homemade preserves.   Put them in your kids lunches or your purse for a mid-morning snack.
