Berry Tart

Summer is coming and so are all the wonderful fresh berries. This recipe is a combination of a couple of tart recipes that I have tried

For Filling:

4 cups of berries chopped (frozen or fresh organic and YES any berry or combination of 2 or 3 will do) I used frozen raspberries and fresh strawberries.

1/4 c agave

1 tbsp or 1 packet of unflavored gelatin

Combine ingredients in a small sauce pan and heat until a soft boil. Reduce and simmer until slightly thickened. Take off the heat and set aside.

For Crust: Preheat oven 350

1 1/2 c almond flour

1/4 tsp salt

1/2 tsp cinnamon

1/14 tsp baking soda

1/4 tsp nutmeg

1/4 c grape seed oil (or other neutral tasting oil)

1 tbsp agave (or honey)

1 tsp vanila

Combine dry ingredients in a bowl. In a separate bowl combine oil, vanilla, and agave, mix well and add to dry ingredients. Mix well and press into a glass  pie dish, or similar sized baking dish.

Bake the crust in preheated oven until golden brown around 8-10 min.

Pour your filling into the pie dish and bake for 10 minutes more.  Serve warm or cold with your favorite coconut, almond or hemp vanilla ice cream.
